Gâteau à la noix et coco et crème fraiche
Si vous avez un pot de crème fraiche dans votre frigo et si vous aimez la noix de coco, voici une recette pour vous qui est très facile à réaliser. Ce cake est moelleux et parfumé à la noix de coco.
Il vous faut :
1 verre de noix de coco râpé (peut être remplacé par des noix concassées)
1 1//2 c à café de cannelle
2 verres de sucres (j’ai mis 1 verre)
3 œufs
200 gr de beurre (j’ai utilisé la moitié)
1 sachet de levure chimique
250 ml de crème fraiche épaisse = 1 1/5 verre (j’ai utilisé la crème fraiche à 15 % MG)
3 verres de farine
½ verre de lait
Préparation :
Préchauffer le four ā 180° C
Placer tout les ingrédients au robot culinaire et mélanger bien.
Verser la pate dans un moule à cake graissé et mettre au four préchauffé 180° durant 1 h.

Sour cream coconut cake

The recipe’s author is a regular Nigella forum participant who submitted this recipe some weeks ago. Her name is Markella. I’d like to thank her for this lovely recipe, even though I made some changes.
It immediately attracted my attention as all ingredients are simple and they are measured in cups.
I printed the recipe and made it this weekend.

In her recipe Markella used walnuts. As for me, I didn’t have them at home and I substituted them for unsweeted shredded coconut. You can use dessicated coconut.
The cake turned out delicious, moist and full of flavor. I guess it will become one of my favorite cakes. It is perfect for breakfast with a cup of coffee.
Here the list of ingredients you’ll need to make it:
1 cup of shredded coconut (Markella uses 1 cup of walnuts, chopped )
1 1//2 tspns ground cinnamon
2 cups of sugar (I used 1 cup)
3 eggs
200g of soft butter (I used 1 cup)
1 1/2 tspns of baking powder
1 1/2 tspns of baking soda
250 mls of sour cream (=1 1/5 cup)
3 cups of cake flour
1/5 cup of milk
Preheat oven to 180 C degrees.
Mix all ingredients together in a food processor.
Pour the batter into a greased cake tin.
Bake at 180 C degrees about 1 hour or until cake tests done. Cool. Cut into squares.
Russian Version
Сметанно-кокосовый пирог
1 стакан кокосовой стружки (можно заменить на стакан грецких орехов, если у вас не оказалось кокосовой стружки)
1 ½ ч л корицы
2 стакана сахара (я использовала 1 стакан)
3 яйца
200 гр слив масла (я использовала 100 гр сахара)
Разрыхлитель – 1 пакетик
205 мл сметаны, полужирной
3 стакана муки
½ стакана молока
Пирог готовится очень просто : смешать вместе все ингредиенты.
Смазать сливочным маслом форму для выпечки.
Выложить тесто.
Выпекать в разогретой духовке при 180 С градусах в течении 1 часа.
