Tourte aux pommes de terre et au saumon/ Salmon Fish Pie / Рыбный пирог с семгой и картошкой

Salmon Fish pie

(Recipe inspired by Nigella’s Nursery Fish Pie, some ingredients were substituted)

This recipe is full of creaminess, softness and buttery heaven. I made this recipe 2 weeks ago when it was 35 C degrees outside and 30 C degrees inside (sorry, but I don’t have an air conditioner). I was not feeling like cooking that day due to a real summer heat. Since I had all ingredients at home to make it, I couldn’t quit so easily. I immersed myself into cooking which last almost 2 hours. I have to admit that this dish is not a difficult one to make. It just takes some time since there are three main steps to follow: preparation of white cream sauce flavored with cheese and peas, then making homemade mashed potatoes and finely removing the bones from the fish as I used fresh salmon. Even if though these three steps can appear long, I found them quite passionate and captivating, and didn’t even notice the time passing.

My verdict for this dish: it is delicious, tasty, savory, pure comfort food and is worth making it, any time, even during a summer heat. This fish pie is blended with the richness of all three flavors: sauce, mashed potatoes and fresh salmon, all sprinkled with yellow grated cheese.

My husband appreciated this dish and told me that it was yummy.

What I liked the most about this dish? definitely its creaminess, softness, savoury-ness.

This white creamy sauce (Bechamel sauce), a basic cream sauce used in French cuisine, gives a creamy softness and texture to a dish. It adds a creamy thickness and a lovely taste of milk, butter, cheese.

Béchamel sauce was perfect for fish as it gave a certain rich and velvety texture. I have made this sauce so many times before and I was quite confident about the result. Indeed, the sauce was so creamy and savory, not lumpy, it coated the back of my spoon.

Homemade potato puree? What can be better than a steaming serving a really good homemade puree ? Nothing is so satisfying for me that a plate of creamy mashed potatoes. They were delicious, thick, and tender and melt in the mouth. It gave a particular creaminess and tenderness to a dish. The mashed potatoes are the ultimate comfort food.

I like fresh salmon, its meaty delicate texture, rich yellow color and medium-red flesh. It was perfect for this pie even though I didn’t use haddock as in Nigella’s recipe.

I substituted cheddar for Mimolette cheese. It has a milder flavor that cheddar and it was an excellent substitute for it.

I didn’t put any boiled eggs as I found the recipe quite fine without them.

Here is the list of ingredients I used to make this fabulous fish pie:

INGREDIENTS:

1.5kg floury potatoes
75 g of butter for sauce + 50 g for mashed potatoes
850 g of fresh salmon
500ml of low fat milk
125g frozen peas
80g of plain flour
125g of Mimolette cheese, grated
Salt, pepper

How I made it:

Peel the potatoes and cut them in half or quarters, depending on size, and put them in a pan of salted water to cook from cold. When they’re tender, drain and then mash them with 75g of the butter, seasoning to taste.

Put the frozen peas in a bowl, pour over some boiling water and preheat the oven to gas mark 5/190°C, slipping in a baking sheet as you do so.

Make white cream sauce (Béchamel sauce): Melt 75g of butter in a saucepan and stir in the flour to make a roux. Take this off the heat briefly, put back over a medium heat and keep stirring until the sauce comes to a boil and thickens. Let it bubble away for a couple of minutes and then take off the heat and stir in most of the cheese (leaving some to sprinkle over the top of the pie later) and the drained peas.

Remove the bones from the fish, cut into small cubes.

Pour the sauce into a 3-litre ovenproof dish, use a rubber spatula to help you distribute it equally.

Place the fish over the sauce.

Top with the mashed potato, using a spatula, again, to help you coax it right over the sides.
Then sprinkle with a little grated Mimolette before putting it on the sheet in the oven for 20–40 minutes, depending on whether you’re putting the pie in hot or cold. Cooking took me 20 minutes at 180 C.
French Version

Tourte aux pommes de terre et au saumon

1.5kg de pommes de terre
75 g de beurre pour la sauce + 50 gr pour la purée de pommes de terre
850 gr de poisson (j’ai utilisé 2 filets de saumon)
500 ml de lait
125 gr de petits pois surgelés
80 gr de farine
125 gr de cheddar ou Mimolette
Sel, Pepper

Etape 1 :
Pour faire de la purée de pommes de terre maison, commencer par laver et éplucher les pommes de terre puis couper-les en lamelles.
Faire-les cuire dans l'eau bouillante salée pendant 20-30 minutes ensuite égoutter-les. Passer-les alors au moulin à légumes. Ajouter le beurre, le sel, le poivre.
Vous pouvez ajouter le lait pour délayer jusqu'à la consistance souhaitée.

Etape 2 :
Préparez une sauce béchamel : mettez le beurre dans la casserole, posez-la sur feu doux. Dès que le beurre est fondu, versez-y la farine, et remuez avec une spatule en bois pour obtenir un mélange homogène, continuez cuire 5 min (sans coloration).

Versez graduellement le lait froid en fouettant vivement pour éviter la formation de grumeaux. Ajoutez la muscade, sel et poivre. Faites cuire encore 5 min ou jusqu'à ce que la sauce béchamel nappe votre cuillère. Ensuite ajoutez le fromage râpé. Mélangez. Incorporez les petits pois décongelés. Mélangez. La sauce est prête.

Etape 3 :
Nettoyer soigneusement le poisson en retirant la peau et les arêtes. Coupez en cubes.

Etape 4 : Assemblage.

Couche 1 :verser la sauce dans un plat profond allant au four.
Couche 2 : disposer le poisson dessus.
Couche 3 :couvrir avec la purée de pommes de terre
Répartir au dessus le fromage râpé.
Faire cuire au four préchauffé à 180°C pendant 20-25 minutes.

Рыбный пирог с семгой и картошкой

Сегодня речь пойдет о пироге, не о мясном, не о сладком, не с рисом, и не с тестом. Это будет рыбный пирог в три слоя, с нежным густым соусом, свежей рыбой и домашним пюре картошкой. Этот пирог тает во рту благодаря сочитанию всех ингредиентов.

1,5 кг картошки
75 гр сливочного масла для соуса + 50 гр для пюре
850 гр свежей семги, филе (или любой другой рыбы, например, тунец, форель, треска, камбала, щука. Если же у вас не оказалось никакой рыбы, то можно заменить рыбу на филе курицы или индейки)
500 мл молока
125 гр зеленого горошка
80 гр муки
125 гр сыра, твердого сорта (натереть на терке)
Соль, перец

Этот рецепт состоит из 3-х основных этапов : приготовить пюре из картошки, приготовить белый соус « бешамаль » с добавлением в него тертого сыра и зеленого горошка, и наконец, проготовить рыбу, вернее убрать косточки и порезать на кубики.

Поставьте воду на картошку. Как вода закипит, положите очищенную картошку, посолите и варите до готвоности. Как картошка сварится, сделайте из нее пюре. В пюре добавьте масло, соль и перец, можно добавить немного молока, чтобы пюре не было сухим.

Затем готовим соус « бешамель ». Это белый соус, который готовится на основе жидкой сметаны (сливок) или молока, масла, муки. Я всегда использую молоко в его приготовлении.

Итак, растапливаем в сотейнике масло, поджариваем на нем муку до золотистого цвета и тонкой струйкой вливаем молоко, не переставая помешивать. Варим до загустения. В конце солим, перчим. В этот смоус также можно добавить мускатный орех, он придает ароматность соусу. Как соус загустеет, добавляем тертый сыр, не переставая помешивать. Затем добавляем горошек. Снимаем с огня.

Займитесь рыбой : Так как я использовала семгу, то я сняла шкуру, убрала косточки и порезала на кубики.

Затем приступаем к выкладыванию слоев. Берем большое глубокое блюдо, и в следующем порядке выкладываем слои :

Первый слой : слой соуса
Второй слой : слой рыбы
Третий слой : слой картошки

Посыпаем сыром и выпекаем в духовке при 180 С в течении 20-25 минут.

Пирог готов !
